BACOLOD City – Lechon traders are against the proposal to put up a roasting site in the vicinity of the slaughterhouse in Barangay Handumanan.

In a public hearing on the proposed ordinance regulating the trade, they argued that requiring them to use the roasting facility to be put up by AVM Bernardo will entail additional logistical costs.

Councilor Em Ang, chairwoman of the Sangguniang Panlungsod health committee, proposed the ordinance in a bid to eliminate backyard roasting and the display of lechon along sidewalks — practices believed to be harmful to consumers’ health.

In relation to this, operator AVM Bernardo offered to provide a roasting facility at the abattoir for newly slaughtered hogs.

But the around 24 lechon traders present at the public hearing were against the plan, saying it would be costly transportation- and time-wise, said Ang.

Most of the traders who attended the hearing display their products along Araneta Street in Barangay Singcang-Airport and are believed to be practicing backyard slaughtering and roasting.

Only hogs freshly slaughtered at the city abattoir may be sold or distributed as lechon, Ang’s proposed ordinance stated.

Ang will call for a committee conference with the City Legal Office, which allegedly advised the lechon traders to stay where they currently roast.

Meanwhile Ang found out only three lechon traders have business permits: Tingting’s Native Chicken, Cay’s Lechon and Mina’s Lechon.

According to the Permits and Licensing Division, 14 traders applied for business permit but only three were able to acquire one as of Monday, she said.

The others have yet to comply with requirements, including certifications from the City Health Office and the Bureau of Fire Protection, she added./PN
